Magpie Roti Chicken Panang Curry

You will need the following –

For the Panang curry paste:

  • 1 cup of fresh coriander
  • 1 Tbsp finely chopped garlic
  • 1 Tbsp finely chopped ginger
  • 1 tsp chili
  • 1/2 a cup peanuts
  • 2 Tbsp red onion
  • Salt & pepper for seasoning
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp cardamom seeds
  • 1 tsp Pakco Masala curry powder
  • 200ml olive oil
  • The juice of one lemon

For the curry:

  • 400g Chicken Breast fillets – cut into chunks
  • Salt & Pepper
  • 500ml Panang curry paste
  • 100ml cream
  • Magpie roti


To make the Panange curry paste, place all the ingredients into a blender. Blitz until a smooth paste has formed. If the paste is dry or not smooth, add a bit of water to loosen up the mixture. Set aside.
In a medium hot pan, add a dash of olive oil and add the chunks of chicken breast. Fry until slightly browned. Season with salt and pepper.
Stir in the Panang curry paste. Add the cream and let it simmer for 3 minutes on medium heat.
In a separate medium hot pan, add a dash of olive oil and place the Magpie roti in it. Cook for 30 seconds each side, or until they are golden brown on each side.
Garnish with a handful of chopped coriander or micro coriander.
